Whats the aim of the vehicle? daily driver, weekend racer, full time track car?

Daily driven I would think that a 3" would be a bit loud.
Weekend racer, well, these appear to be also daily driven, so the same applies.
Track car, dyno and see what gives you the performance you want.

I would think on a stock GT-T, that 2.5" would be plenty... add a few mods, and depending on what they are, change the sizing.

full exhuast for $180................. either its not a full exhuast or they reused your mufflers, or the mufflers they used are crappy ones which wont last on a turbo'd car

I will be going either 2.5" or 2.75" on mine, I think 3" is overkill for a street driven daily.

If its anything like the GT4, it will be 2.5" but crushbent, especially if it goes over the rear axle.
