Im guessing you proberly have it right there. Im sure that when your thermostat/temperature reaches a certain point, the cooling fans kick in and help to provide extra air flow through the radiator.

Either hook up both temp gauges or fit a manual fan switch so you can turn them on yourself.

the 20v has got 3 senders for water temp, 2wire (green plug) - WTS goes to ECU, 1wire (just a metal plate sticking out of it) is for standart guage, and last one is white plug, placed between thermostat and radiator (on thermostat housing, left side of the engine) is a temp switch to turn on/off fans, if you disconect it the fan will stay on all the time while igniton is on.

yep thats right, but there should be a separate switch to control your thermo fans, independent of the ecu water temp sensor. Its located in the same housing as the thermostat, just below the dizzy.

You could try leaving your car idling for 10 or 15 mins to see if the fans kick in. If they don't, try unplugging the lead from the sensor, the fans should start up (or you may have to short the wire out to ground, I can't remember).

Edit: dang 1 min too late lol

Or why dont you just go and buy a tee piece so you can have both the factory sensor and aftermarket sensor installed as obviously your having problems without the factory one being in there, instead of f***ing round wiring in switches to turn the fans on and off or having the fan on all the time. The car will take longer to warm up with the fan on too which isnt good for it

The car will not take longer to warm up with the fan going all the time, provided the themostat is in place and in working condition. The draw back is that fan will put more strain on charging system, car might consume more gas (marginally), and will shorten the life time of the fan itself
