I think your overheating problem was because:

Air coming into engine bay through front, and air trying to come in through side into engine bay = not enough air circulating through radiator.

Am relieved that my recollection of Mini's was correct about you having the fan going the wrong way. It's been about ten years since my last work on a Mini.

I replaced all the radiator hoses not to long ago and ran radiator flush through it then, the cars been fine since. Now it's just running a little cold.
I was thinking about putting a resistor on the fan line to slow it down a shade to bring the temp up a bit?? just for now anyways.

Nah, just get a new thermostat. Cheap and easy.

To be honest, Mini's are more likely to overheat than to overcool.

Yeah i never had a problem with over heating.
But am i going to have issues with the motor now running colder than normal??? Normally it sits half way, now it sits bout 1/4 to 1/3.....

imo, which is just that, my opinion:
Dont get a fan controller. The position of the mini radiator makes the fan the only functional cooling source. I also would not put a resistor in it personally. The thermostat will control the temperature of the engine. it opens and closes with the water temperature. That is what regulates the temp, not the fan.
On the normal front mount layout the fan comes on when sitting in traffic or pushing the engine hard (or radiator is shagged) as the airflow does not provide adequate cooling flows alone. Up untill this point, the thermostat controls the water temp going through the engine. The fan comes on when the thermostat is wide open, but the radiator is still not cooling sufficently. In a mini you dont have the airflow, so the fan needs to be running constant.
