I've had fun with 7" rims and fitments too, I've got an AE92 GTZ and an AE82 FX-GT, and I've found that I can't run the GTZ rims on the FX-GT because they rub on the struts. What I CAN tell you though, is that the GTZs run a fractionally wider bearing in the rear hub, meaning a larger housing and consequently a bit more clearance for the rims.
Tyres can make a slight difference too, I've got 17x7's on my 98 Carib, and with the old tyres I had no problems with guard rubbing, I've just put new tyres on it (205/40/17 Nexens) and I'm running into the occasional problem with the guards - though only when the car's got 4 people in it.
