Engine temperature gauge drops very low when over 80kph

Hi guys, I've just fitted an APEXi pod filter to my AE101 Marino 20v and took it for a drive out Maraetai and I noticed that at speeds above 80kph the engine temperature gauge would drop drastically down to the very bottom. Then when going back to 50kph it would go back to normal.
I have retained the AFM as the POD came with the attachment. Any ideas what might be causing this? Thermostat stuck open?
