If you want a good exhaust. Pick a pipe size. Then buy a cat, a resonator and a muffler that are at least a 1/4 inch bigger in diameter. Slap the bugger together and enjoy.
Make sure to pick components that actually are all straight through. If you can't see out the other side it ain't good enough.

I already have extractors on it, which I have welded on a 2.25 flange on it, but is that a bit on the small side? Do I need to jump up to 2.5inch?
Can some point me in the right direction and recommend the types of mufflers, good brands etc.. which would be a great help.

i would use at least one straight through resonator half way down the exhaust and a super turbo style at the back.
Or super turbo half way down and cannon style at the rear..
