Anything about the car that requires driver input to make it do what you want.

ie, not much power so you have to really "drive" it to go fast
Old/ sus suspension may roll/pitch but that just makes cornering fun
Etc

But Mr2s have the engine at the front, when they snap oversteer.  :P

P.S. What makes driving fun for me?

The car having actions that require the driver to react to.

Locking up a wheel, getting sideways, spinning a wheel, lifting a wheel, changing gear, using the clutch, turning the wheel, etc etc is all what the fun is.

If there was a car with a million units of power, a million units of grip and a million units of braking, it'd not be much fun to drive at 50 or 100kph.

Having a car that reaches its grip and adhesion limits at a fairly low speed can be a hell of a lot more fun than you'd first think.

Something with balance. Can't have too much of one thing
Motorsport is like sex. You could take it to track and have a long, enjoyable session, or you could take it to the strip and get it over with in less than 20 seconds.
