I seem to alternate between su bu ru and su ba ru for some reason. Must be all the mechanics I talk to saying it differently.

Depends how fast you say it in Japanese.

Slowly is as it is written: Su Ba Ru

Fast sounds like Suburu.

Used in normal Japanese conversation, it wouldn't be slow enough to sound like Subaru, which is why most of the world says 'Suburu'

Must like how if you're asking a question, you typically have 'desu ka' on the end of the sentance (not always, but a lot of the time).
Hear it said, it just sounds like 'Des ka'.
