When i hit the boost the water temp gauge trends down big time.

I have got a HDI intercooler, GR2 i think. Basically it seems as if the intercooler pulls all the heat out of the coolant. Some times if its a bit cold out the temp will sit at the bottom of the gauge.

Could the intercooler be that good to pull all the heat out of the water and engine by way of the cooler air charge. (or have i been smoking in the shower) ?

When the coolant temp drops will the ECU change the timing and change the fueling thinking the engine and coolant is too cold ?

No, nothing to do with intercooler. Intercooler will never take over for the radiator, it is very separate cooling system. It has separate radiator separate pump etc.
It is most likely due to jammed open thermostat (higher revs = more flow = lots of cold water from radiator), or as simple as loose connection.

Running an aftermarket Air to Air system. Quite a few mods too.

It only really happens when I am hard on boost. The temp decrease reading is relative and seems to be correlated to on boost - not like a loose wire- ( smooth movement )

+1 for thermostat. Apart from a faulty sensor, there's nothing else that can explain it, especially on an engine that has the thermostat on the inlet.

A headgasket will probably fix that one too.
