IMO and experience EBC Green Stuff are very average, Mintex 1166 are very very good and work relatively well when cold (no drama with warrants).
Had the EBC's on my AE101 FX and went to Mintex and will never look back. IMO who cares about brake dust, do you want good brakes or not. I have 17inch VX1's and they are a PITA to keep clean but what’s a bit of extra cleaning when it makes such a dramatic improvement to the brakes.

Depending on how many K's your GT-T has done and whether the rotors are down to their tolerance thickness or not you could consider the following upgrade which I have done to my FX (which I admit is no where near as heavy as your GT-T would be) but can't fault (pretty good value at just over approx $1000 a year ago excl braided lines and fitting) for what it has given me in terms of brakes, pulls up faster, never fades):
Brembo vented Slotted Rotors in the front;
New Factory rotors in the rear (couldn’t get slotted);
Mintex 1166 pads all round;
Elf XT3167 mineral fluid; and
I have just had Mossrax in Wellington put in a full set of braided hoses.
You could also consider bracing your master cylinder which can firm up pedal feel by limiting firewall flex, which should mean you can apply more pressure faster (same sort of theory as braided lines I believe).
