You want the system to be header back and about 2'-2.25. Just use mild steel, very cheap. Won't make much difference in power, i bet it'll feel faster because it'll be loud

Main restriction is in the end muffler and expansion chambers, not as much in the cat so if you want to be all green keep the cat. 4AGZE one is very good, 2.5' inlets/outlets, could be the same on most others, havn't really compared.
I guess you could almost argue that some cats are less restrictive than some resonators. Cat just has slots, which would probably help straighten flow and has a similar flow area to the inlet. Some resonators cause lots of turbulance and have poor flow dynamics i.e expand the gas then force through a smaller hole without any gradient. I have heard exhaust shops saying a cat is only 1% of the total restriction. Also with a resonator the flow capacity decreases with RPM as the turbulance increases.
