What I was trying to say before I lost my way, was that the temperature gauge can't be relied on to tell you that you have lost your water !!!! It will still give you a reading when all (or most) of the water is gone. Just as you found.
Even when there is only air in the cooling system it will give some sort of reading. But because air is a poor conductor of heat compared to water, the reading could be quite misleading., and lag a long way behind engine temp.
