OK, we have tested the cooling system on my ae92 fxgt and everything seems to be in order (tested inlet and outlet temps as well after 10 mins of 2-3000rpm)
so it looks like the gauge/ sensor is faulty.

it still shoots up from cold to red hot after about 2 mins of running.
I am fairly confident that i have the right sensor in there now.

any suggestions? or should i just unplug the gauge and run an aftermarket gauge? (not really idea)

check your earthing points on the motor i had the same problem on my ae82 when i did my 20v change over, a new earth lead from bulk head to manifold on gearbox end sorted mine out

I had the same problem after my 3S-GTE Conversion. I found that there was an earth wire that went from the Temp gague that earthed onto the Engine block that I had missed. Hooked that up and all was well
Just remember: The glass is neither half full nor half empty, it is merely the wrong size
