Alright, so what kinda car is it? I worked in the auto upholstery trade for about 2 & 1/2 years so know the ins and outs of headlinings. You chosing to go vinyl for what reason? You plan on spraying/covering your sunvisors aswell.
At the end of the day vinyl is going to be the trickier option as there is usually abit of shape around where the sunvisors fold up into the headlining, which means a higher chance of the glue lifting, regardless of how gooder quality the glue is.
I also fully recommend you remove all traces of the old fabric aswell, otherwise you'll just be asking for trouble covering over top. Also I do have to recommend spraying the glue from a air powered spray gun, this makes for alot better, thinner and more even coverage, the vinyl can react if too much is put on which oftens happens when you brush it on creating bubbles.
