I wonder if the level sensor is causing the problem. Why not remove it and check it's functioning okay? Not sure if it's a n/o or n/c contact switch though.

Ah intermitent faults the, worst kind, are you the water level sensor would simply be no or nc contact?? Most sensors live that are variable resistor type things that then have a controller around somewhere after it to convert the signal or porbably in the computer.
Sounds to me like you have a plug almost but not quite in somewhere or a dry solder joint, check all posible plugs and connections 1st, Probably won't even be very loose just enough to wriggle about a little
