Your AE70 isn't burgundy by chance? I keep seeing a really tidy one with Modgie-type mags in the Riccarton area, is that yours?
Wiring: Yes, it is possible to do it yourself, you'll need a wiring diagram for the AT160, and the AE70. Planning it makes it a lot easier as well, sitting down with both diagrams and working out what you do and don't need, and what you'll need to connect to the existing AE70 loom, this way you don't forget the small things, like the tach feed, gauges etc.. been there done that! hahaha. It took us a couple of days to do, you'll also need a decent multimeter, soldering iron, and a lot of spare wire. Don't forget you'll also need to get EVERYthing from the AT160, coil, resistor packs.
Not sure on the Celica fuel pump, we fitted an external off a Honda, made up a 12V relay feed, worked really well. From memory we also had to weld a fitting to the fuel tank to accept another line?
We got the fuel lines off the donor car, they were much wider than the AE70 lines, with gentle bending we got them to fit, you may want to try the same with the Celica ones to keep costs down! And no, the AE70 lines aren't sufficient for a 4AGE.
No idea on the catch can, we used factory rwd manifolds.
Spigot bearing, go to club4ag.com and try and get a part number, or maybe Mr Revhead could suggest something? Not hard to fit, just whack it in the rear of the crank with a bit of wood. I'm sure you only needed the spigot bearing if the motor was FWD? So I'd assume you'd need one?
Not sure about the 3A-U waterpump, we used 4AGE gear.
We had no problems fitting the motor/box with the AE70, I'm pretty sure it was rack'n'pinion. The AE70 came out with both rack'n'pinion and recirculating ball steering, I think with the recirculating ball you need to modify either the rack or engine/gearbox brackets.
