I doubt you get over 80psi when the oil is really hot,

cold oil gives more pressure, hot oil gives less.

i've installed a cheap autogauge (sh!tty, I know, but it was cheap!) 100psi oil pressure gauge on my 4agte and hooked it up but its reading off the clock, even when just cranking or idling

gauge is brand new and had the original sender etc.

does it sound like a faulty gauge or maybe wired incorrectly, not earthing properly etc?

cheers

guages will read high if the signal wire is earthed

You are probably using a late model sender unit which is just on or off to power a oil pressure warning light on the dash. You need a variable pressure sender from a car with a factory oil pressure guage, I think early Fxgt had them, ae86 does.

water temp depends a bit on how your system is setup, most standard cars (generally) operate at somewhere between 80 and 90 degrees C. i cant imagine you'd want it going much higher than 95 or 100, anything past that is asking for trouble imo - though some of the race car guys might have more solid info for you in that respect.
