recommendations on what brand and grade fluids I should be using?

I assume that since you are asking for clutch fluid it's not an auto 
I haven't had any troubles with Castrol VMX in my Celica and my Corona, both 5 speed manual 3S gearboxes (GE, F respectively)
As for fuel filter my ST183 has a standard repco fuel filter in it (it's a bastard of a thing to replace too, better you than me) and I have touched the clutch fluid.

Manual boxes dont have a trans filter, so no need to worry there
