What about a ballvalve? or possibly a valve that can be opened by cable from inside? like a heater tap?.
If you had one on the return, you could close it seperating sump from the catch can when your on the track. Open it back up when its not running in the pits so oil can return.

Like cambo1 suggested, its the crankcase pressure stopping oil returning from can->sump, you literally have crankcase pressure coming from r/c covers and from sump meeting at the can where oil is sitting, with a ballvalve can->sump would be totally seperate.

The breathers/small filters used on most catch cans becoming blocked with oil as suggested makes sense also and wouldnt help with the situation..

Drysump pump.. problem solved. Others created :)
Reality: A nasty hallucination that is caused by excess blood in the alcohol stream.

I never had any oil breathing problems in my 4agte, 16v smallport, more or less bog standard, had cams, 14/15psi, 9000rpm redline, never breathed much and that did a few hard laps round manfield without any oil issue. never filled a catch can and the catch can was not plumped back into the sump.
Check ring end gap & piston clearance tolorance. Also check ring orientation, make sure they are stacked correctly to minimise blow by.
