Without an O2 sensor, or an O2 sensor failure the car should automatically over fuel. It will decrease performance and wash the cylinders (causing increased wear) but is preferrable to lean detonation or over heating.
It most certainly should have an O2 sensor. And by the way, going from the standard 4-2-1 to a 4-1 system will have lost you mid range horsepower and possibly some top end as well. Your working old world if you still believe a 4-1 system can outperform a 4-2-1 system in any circumstance, modern collectors have changed that sygnificantly.
The standard system is very good, we have a blacktop here in CHCH running 212hp with standard extractors. He also flowed them and stated there was little if anything to gain by going aftermarket.
