brake rotors are held on by the wheel being bolted on, and to remove them you just take the caliper off and pull them - sometimes they sieze onto the center spigot, but what you've described is exactly how they should be!
the wheelstud movement relative to the disk is normal too.
the wheel studs are attached to the hub, not the disk.
seriously, everything you've described is perfectly normal.
