Valve stem seals

2000 rpm start up is far from normal first place to start

Does it smoke more or less after you park it on a slope?

It'll be the Valve Stem Seals. 1JZs are prone on have those wear out.

Definantly stem seals for the smoke on startup.

And I have found the 1800rpm cold start typical of the jz's that ive owned, but thats only when DEAD cold and should drop to more like 1200rpm after about 60 seconds and then 900 after 2 mins- it drops very quickly.

Def not right if it idles at 2000rpm when even slightly warm tho!

The do sometimes have trouble with the IAC which is what controls this - might be worth taking it off and giving it a good clean if you think its not right

will the stem seals cause damage to the engine

Well, the stem seals won't cause the engine to suddenly 'let go' and cause a breakdown.
Depending on how bad it is and what your future plans for the car are, you can leave the stem seals until you next have the engine out/install cams/turbo upgrade etc etc, but I would definantly look at getting them done at some point.
