Ive got a hole left for a gauge, but whats more important, oil pressure, water temp or oil temp? The factory dash has water temp(ish), so kind of feeling oil, but whats more important/ likely to go wrong?
Oil pressure by far. Although usually by the time you notice it low or get a warning the damage is done. Can be a good indicator of how the engine is going in regards to its life blood.

In context of the original question, your justification for your answer is a contradiction.
If this is a road car no extra gauges are important at all.
If it is a competition car of some description a water temperature gauge is much more valuable.
Water temperature is usually a constant and a gauge is an alert of any issues. If you do have over heating issues, with a gauge you can monitor them and this may enable you to continue.
Oil pressure issues are generally absolute. You're out of action. You can be alerted to oil pressure issues by a light on the dash which can be triggered well before damage is done by a range in sensors/senders.
In fact, you're more likely to respond to a light as it's 'in your face' and you can't ignore it. And if you want you can have a gauge under the bonnet.

The intercooler thread was more for novelty value and why not, this thread is because Ive got a dual gauge pod and it looks silly with just a boost gauge. Secound gauge is realy novelty as well, but may as well be of the best use. Car will in the end be rather tickled up and some mods are just in preperation for further down the line.

Its an old 2JZ with a bigger turbo being slapped on, I'm sure they're good engines but I'm also pretty sure they wear out too.

I'm aware of what he's got.
I just hate seeing him spend money where he doesn't need to.
I been beating up on my JZ for over a decade and have never thought to run an oil pressure gauge.
