Up on some oversized axle stands, have pulled the rear springs to get reset with an overrider leaf and the front eyes reversed. Will be pulling the box and putting a new clutch as well as it slips when warm.

A bit of work on the deck too, just waiting for new rims/tyres to fill the flares out more. Going from 15x8 0 offset and 195/50's to 15x8 -25 offset and 225/50's.

Your insurance is bullshitting you. The policy is identified uninsured driver, you have identified them and provided enough details so the excess should be covered. Go read the policy wording and keep going up the chain at the insurance company until they pay out the excess.

Put new rims/tyres on my 1964 Rambler American. 235/60 14 on 8 inch steels, 195/65 14 on 6 inch steels for the front. Went full bogan spec with white writing on the rears.
Then I threw a bunch of ignition bits at it, rebuilt/cleaned out the carb and then turned the key over. Fired up pretty easy ...

If you need to touch the bumpstops to get travel, then legally you need to cert it. If it is bouncing off them at the moment then it won't be fun to drive once the springs settle a bit more.

Looking at that pic, I presume it is rear sump with the bowl hidden by the tyre it is sitting in so should be all good for drainage.

If they can't fix it because it is too complex then they shouldn't have sold it. Make them pay for the full amount as you are completely entitled to do, swap head units after you know it is all working properly if that is what you want to do.
